Instructions
  1. Combine all ingredients except for olive oil, in a small bowl.

  2. Remove pork shoulder from packaging and rinse under cold water. Pat dry with paper towels and use pastry brush to completely cover with olive oil'

  3. Sprinkle spice mixture evenly over surface of meat. Gently rub into pork until entire roast is covered.

  4. Place in a large roasting pan, skin side up. Roast in preheated oven at 425 degree for 30 minutes. Reduce heat to 300 degrees and roast for an additional 30 minutes per pound or until thermometer reaches 185 degrees.
  5. Remove roast from oven and tent loosely with aluminum foil, let rest for 30 minutes. The meat can be sliced and served as is, or pulled apart and shredded with two forks to use in other recipes.

Once shredded try using the pork in tacos, pasta dishes, omelets or just add BBQ sauce and serve on nice buns for a quick and easy weeknight diner that will please everyone.
