Turkey Wrap with Apple Slaw

turkey wrap

This is adapted from a recipe I found on Emilybites.com (FYI… I love her site! amazing recipes) here is a link to the original version Emily Bites Apple Cheddar Turkey Wrap

I made a few changes with the ingredients I had on hand and the results turned out delicious. The apple combined with the slaw mix and honey and vinegar dressing add a great crunch and twang to a traditional turkey wrap.

My version comes in at 6 SmartPoints per wrap, so you get a nice filling meal without breaking your points bank.

Instructions
  1. Place flatbread on flat surface. Layer spinach, turkey and cheese down center of flatbread, leaving a bit of space at the each end to fold in.
  2. In a small bowl, combine apple cider vinegar, honey, oil and add a pinch of salt and pepper. Stir until well combined. Mix in the apple matchsticks and the coleslaw mix until evenly coated. Layer coleslaw/apple mixture, down center of flatbread, on top of meat, cheese and spinach.
  3. Fold the ends of the flatbread, in towards the filling. Then roll long ends of flatbread until all ingredients are tucked inside enchilada style.
